Pumpkin Protein Cream Cheese Muffins



Are you like me craving those Starbucks pumpkin cream cheese muffins but feeling way too guilty to eat all those sugary calories? Those little muffins are one of my favorite fall treats and it takes all my will-power to not order them every time I go to Starbucks.

So I've been working hard the last week on making a healthy version of those muffins that are pretty easy to make! It took me a few times to get it right, but once perfected.. they're pretty amazing.. and best thing is they're totally guilt free.

So, here it is! The recipe you've been waiting for!...

Dry ingredients:

1 cup oat flour

1 cup vanilla protein

1 tsp baking powder

1 tsp baking soda

1 tsp cinnamon

1/2 tsp nutmeg

1/2 tsp pumpkin pie spice


Wet ingredients:

2 large bananas

1 egg

4 TB honey

3 TB coconut oil

I cup pumpkin purée

1/2 cup almond milk


Filling ingredients:

8 TB cream cheese

6 TB Greek yogurt

1/2 tsp liquid stevia

1/4 tsp vanilla extract


Directions:

Mix each apart in separate bowls. Mix up the wet ingredients for with dry ingredients half at a time.

Spray muffin dpan with pam and fill with batter 3/4 the way up.

Pour filling into a ziplock bag and cut the corner out. Push slightly into the center of the muffin and leave a little on top. Bake at 350 for 30 min.
